1 pound turkey bacon
2 cups diced chicken ham
1 cup chopped onion
2 cups frozen mixed vegetables
3 cups cooked rice
2 cups shredded cheese
1/2 cup cream of chicken soup
1 cup sour cream
1 teaspoon garlic powder
1 teaspoon black pepper
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
In the same skillet, sauté the onions until translucent.
In a large bowl, combine cooked rice, diced chicken ham, frozen vegetables, cheese, cream of chicken soup, sour cream, garlic powder, and black pepper. Mix well.
Add the chopped turkey bacon and sautéed onions to the mixture and combine.
Transfer to a greased baking dish and bake for 30-35 minutes, until bubbly and golden on top.
Let cool for a few minutes before serving.
Notes
For a spicier version, add diced jalapeños.
Can substitute chicken ham with diced cooked chicken if preferred.
