Anti Inflammatory Turmeric Chicken Soup

A delicious and nourishing soup that combines the health benefits of turmeric with tender chicken and fresh vegetables, perfect for soothing the soul.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 2 cups chopped kale
  • 1 cup diced carrots
  • 1 cup diced onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken and cook until browned, about 5 minutes.
  3. Remove the chicken and set aside. In the same pot, add the onions, garlic, ginger, turmeric, carrots, and cook for another 5 minutes until the vegetables are tender.
  4. Add the chicken broth, salt, and pepper. Bring to a boil.
  5. Return the chicken to the pot, cover, and simmer for 20 minutes.
  6. Add the kale and simmer for an additional 5 minutes.
  7. Shred the chicken in the soup before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • Feel free to add other vegetables you enjoy.
