Apple Cinnamon Greek Yogurt Muffins

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced apples

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the brown sugar, granulated sugar, Greek yogurt, eggs, and vanilla until combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the diced apples gently.
  6. Distribute the batter evenly into the muffin tin and bake for 20-25 minutes.
  7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

  • For an extra touch, sprinkle some cinnamon sugar on top before baking.
