Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup cooked turkey bacon, chopped

Instructions

  1. In a bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Combine the wet and dry ingredients until just mixed.
  4. Fold in the chopped turkey bacon.
  5. Preheat a mini muffin pan and spray with cooking spray.
  6. Pour batter into each muffin cup, filling about 2/3 full.
  7. Bake at 350°F for 12-15 minutes until golden brown.
  8. Let cool slightly before removing from the pan.
