  • 4 slices turkey bacon

Instructions

  1. In a large bowl, mix together the flour, brown sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and mashed banana.
  3. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  4. Heat a non-stick skillet over medium heat and grease lightly.
  5. Pour 1/4 cup of pancake batter into the skillet for each pancake.
  6. Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 2 minutes until golden brown.
  7. Meanwhile, cook the turkey bacon according to package instructions until crispy.
