  • 1 cup dates, pitted and chopped
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine the chopped dates and baking soda with boiling water. Let it sit for 10 minutes.
  3. In a separate bowl, cream the butter and sugar together until fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the date mixture, followed by the flour, cardamom, and salt until combined.
  6. Pour the batter into the prepared pan and bake for 50-60 minutes.
  7. Allow to cool for 10 minutes before transferring to a wire rack.

Notes

  • For a richer flavor, add chopped nuts.
