  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 large potatoes, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream

Instructions

  1. Cook the turkey bacon in a large pot until crispy, then remove and crumble it.
  2. In the same pot, add olive oil, onion, and garlic; sauté until soft.
  3. Add ground turkey and cook until browned.
  4. Stir in chicken broth, potatoes, carrots, celery, salt, pepper, and paprika; bring to a boil.
  5. Reduce heat, cover, and simmer until vegetables are tender.
  6. Stir in cheddar cheese and heavy cream until melted and combined.
  7. Top with crumbled turkey bacon before serving.

Notes

  • For a spicier soup, add a pinch of cayenne pepper.
  • Feel free to use regular bacon instead of turkey bacon for more flavor.
