  • 1 pound smoked sausage, sliced
  • 1 packet ranch seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes, sliced smoked sausage, ranch seasoning, garlic powder, olive oil, salt, and pepper; toss to coat.
  3. Spread the mixture on a baking sheet in an even layer.
  4. Bake for 25-30 minutes until potatoes are tender and golden brown, stirring halfway through.
  5. Remove from oven and mix in the sour cream and half of the cheddar cheese.
  6. Top with the remaining cheese and return to oven for an additional 5-10 minutes until cheese is melted.
  7. Serve hot and enjoy!
