Chi-Chi’s Baked Chicken Chimichangas

A delicious and easy recipe for baked chicken chimichangas that are packed with flavor.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup refried beans
  • 1 cup cheese, shredded
  • 1 cup salsa
  • 1 teaspoon taco seasoning
  • 8 flour tortillas
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the shredded chicken, refried beans, cheese, salsa, and taco seasoning.
  3. Warm the tortillas in the microwave to make them pliable.
  4. Spoon the chicken mixture onto each tortilla, fold in the sides, and roll it up tightly.
  5. Place the chimichangas seam-side down on a greased baking sheet.
  6. Brush the tops with olive oil.
  7. Bake for 25-30 minutes or until golden brown.
