Chicken Parm Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups cooked pasta
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
  2. Add chicken broth, diced tomatoes, Italian seasoning, garlic powder, and onion powder. Bring to a boil.
  3. Reduce heat and let simmer for 20 minutes until chicken is cooked through. Remove chicken, shred it, then return to the pot.
  4. Add cooked pasta and stir well.
  5. Top with mozzarella and Parmesan cheese, cover, and cook until cheese is melted.
