  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1/2 cup strong brewed coffee
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp instant coffee granules

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter until light and fluffy, then add eggs, coffee, and vanilla extract.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool.
  7. For the frosting, whip the heavy cream with powdered sugar and instant coffee until soft peaks form.
  8. Pipe or spread the whipped cream on top of the cooled cupcakes.

Notes

  • These cupcakes can be made ahead of time and stored.
  • Enhance the coffee flavor by using espresso powder instead of instant coffee.
