Instructions

  1. In a bowl, mix cottage cheese, flour, eggs, sugar, baking powder, and vanilla until combined.
  2. Heat a skillet over medium heat and add butter.
  3. Pour 1/4 cup of the batter for each pancake onto the skillet.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. In a separate pan, cook turkey bacon until crispy.
  6. Serve pancakes topped with crispy turkey bacon.
