Creamy High-Protein Chicken Pot Pie Stuffed Sweet Potatoes

A delicious and healthy twist on traditional chicken pot pie, using sweet potatoes for a nutrient-rich and satisfying meal.

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1 cup frozen mixed vegetables
  • 1/2 cup Greek yogurt
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke holes in the sweet potatoes and bake them for 45-60 minutes until tender.
  3. In a bowl, mix the shredded chicken, frozen vegetables, Greek yogurt, chicken broth, garlic powder, onion powder, thyme, salt, and pepper.
  4. Once the sweet potatoes are done, slice them open and fill them with the chicken mixture.
  5. Return them to the oven for an additional 10-15 minutes.
