Creamy Tuscan Ravioli Soup

  • 8 ounces turkey bacon
  • 1 cup chicken ham, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 6 cups chicken broth
  • 1 pound frozen ravioli
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add olive oil, onion, and garlic; sauté until translucent.
  3. Add chicken ham and sauté for a few more minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add ravioli and cook until done, about 5-7 minutes.
  6. Stir in heavy cream, spinach, and Italian seasoning.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with crumbled turkey bacon.

Notes

  • This soup can be made ahead and stored in the fridge.
  • Add cheese for extra creaminess.
