Dark Chocolate Peppermint Mousse Tart

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • ½ cup powdered sugar
  • 1 teaspoon peppermint extract
  • ½ cup whipped cream, for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the chocolate cookie crumbs and melted butter, then press the mixture into the bottom of a tart pan.
  3. Bake the crust for 10 minutes, then remove and let cool.
  4. In a saucepan, heat ½ cup of heavy cream over medium heat until it begins to simmer.
  5. Remove from heat and add the chopped dark chocolate, stirring until smooth.
  6. In a large bowl, whip the remaining heavy cream with powdered sugar and peppermint extract until stiff peaks form.
  7. Fold the chocolate mixture into the whipped cream until well combined.
  8. Pour the mousse into the cooled tart crust and refrigerate for at least 4 hours.
  9. Before serving, top with whipped cream and additional peppermint if desired.
