Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the potatoes, carrots, and zucchini.
  3. In a small bowl, whisk together the olive oil, garlic, thyme, rosemary, salt, and pepper.
  4. Pour the herb mixture over the vegetables and toss to coat.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 25-30 minutes, or until golden brown and tender, stirring halfway through.
