  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 whole almonds
  • 1/2 cup dark chocolate chips

Instructions

  1. In a bowl, combine shredded coconut, almond butter, honey, vanilla extract, and salt.
  2. Mold the mixture into small bars and place an almond on top of each.
  3. Chill the bars in the refrigerator until firm.
  4. Melt the dark chocolate chips and dip each bar into the chocolate.
  5. Place the chocolate-covered bars on parchment paper to set.
