- 1 cup pumpkin puree
- 1 cup Greek yogurt
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the pumpkin puree, Greek yogurt, honey, eggs, and vanilla until well combined.
- In another bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into a greased muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
