  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the pumpkin puree, Greek yogurt, honey, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into a greased muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool before serving.

Notes
