- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 4 slices turkey bacon
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cook the turkey bacon in a pot over medium heat until crispy. Remove and set aside.
- Add butter, onion, and garlic to the pot. Sauté until onions are translucent.
- Add the diced potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil and simmer until potatoes are tender.
- Stir in the heavy cream and shredded cheddar cheese until melted.
- Chop the turkey bacon and stir it back into the soup before serving.
Notes
- For a thicker soup, blend a portion of the soup and mix it back in.
