Hearty Cheddar Garlic Herb Potato Soup Recipe

A creamy, flavorful potato soup with hearty cheddar, garlic, and herbs, combined with turkey bacon for a delicious twist.

Ingredients

  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the turkey bacon in a pot over medium heat until crispy. Remove and set aside.
  2. Add butter, onion, and garlic to the pot. Sauté until onions are translucent.
  3. Add the diced potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil and simmer until potatoes are tender.
  4. Stir in the heavy cream and shredded cheddar cheese until melted.
  5. Chop the turkey bacon and stir it back into the soup before serving.

Notes

  • For a thicker soup, blend a portion of the soup and mix it back in.
  • Garnish with additional cheddar and fresh herbs if desired.
