Homemade Easy Chicken Pot Pie Recipe

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and crumbled
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  3. Gradually whisk in chicken broth and milk, and cook until thickened.
  4. Add chicken, turkey bacon, mixed vegetables, salt, pepper, garlic powder, and onion powder to the sauce.
  5. Pour the mixture into the pie crust and cover with the top crust, sealing the edges.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake for 30-35 minutes or until the crust is golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • For a creamier filling, add a little more milk.
  • You can use leftover Thanksgiving turkey for an even quicker recipe.
