1 tablespoon olive oil
1 pound boneless, skinless chicken breasts
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
4 cloves garlic, minced
8 cups chicken broth
2 cups egg noodles
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
Instructions
Set the Instant Pot to sauté mode and heat the olive oil.
Add the chicken and cook until browned, about 5 minutes.
Add the onion, carrots, celery, and garlic, and sauté for another 3 minutes.
Pour in the chicken broth and stir in the noodles, thyme, salt, and pepper.
Close the lid and set to manual pressure for 7 minutes.
Once cooking is done, perform a quick release of pressure.
Remove the chicken, shred it, and return it to the pot. Stir in the parsley before serving.
Notes
Feel free to add other vegetables like peas or corn for added nutrition.
This soup is great for freezing; just leave out the noodles until you’re ready to eat.
