Instant Pot Chicken Noodle Soup

This Instant Pot Chicken Noodle Soup is the perfect recipe for a cozy meal. It combines tender chicken with hearty vegetables and noodles for a delicious comfort food experience.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add the chicken and cook until browned, about 5 minutes.
  3. Add the onion, carrots, celery, and garlic, and sauté for another 3 minutes.
  4. Pour in the chicken broth and stir in the noodles, thyme, salt, and pepper.
  5. Close the lid and set to manual pressure for 7 minutes.
  6. Once cooking is done, perform a quick release of pressure.
  7. Remove the chicken, shred it, and return it to the pot. Stir in the parsley before serving.

Notes

  • Feel free to add other vegetables like peas or corn for added nutrition.
  • This soup is great for freezing; just leave out the noodles until you’re ready to eat.
