Leftover Cranberry Sauce Coffee Cake Muffins

  • 1 cup leftover cranberry sauce
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the cranberry sauce, sugar, and eggs.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  5. Fill muffin cups 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool for a few minutes before removing from the tin.
