Leftover Cranberry Sauce Coffee Cake Muffins

These delicious muffins are a perfect way to use up leftover cranberry sauce. Moist and flavorful, they make for a great breakfast or snack.

  • 1 cup all-purpose flour
  • 1 cup leftover cranberry sauce
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs, then add the sugars and mix until smooth.
  4. Add the oil and vanilla to the egg mixture, then stir in the cranberry sauce.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the walnuts.
  7. Fill muffin cups 2/3 full and bake for 18-20 minutes.
  8. Let cool before serving.

Notes

  • For extra sweetness, top with a crumb topping before baking.
  • These muffins can be enjoyed warm or at room temperature.
