Lemon Chicken Soup

A comforting and easy-to-make lemon chicken soup perfect for family meals.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onion and garlic; cook until softened.
  4. Add the chicken broth, carrots, and thyme; bring to a boil.
  5. Reduce heat and simmer for about 20 minutes.
  6. Stir in the spinach and lemon juice; season with salt and pepper.
  7. Serve hot, garnished with additional lemon slices if desired.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
  • Can be refrigerated for up to 3 days.
