Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 6 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup uncooked rice
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add diced chicken, cook until browned.
  4. Pour in the chicken broth, add carrots and celery, and bring to a boil.
  5. Stir in the rice, reduce heat, and simmer until rice is cooked.
  6. Remove from heat, add lemon juice and zest.
  7. Season with salt and pepper, and serve hot, garnished with parsley.

Notes
