- 1/2 cup sugar
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 egg
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
- In another bowl, mix together the buttermilk, vegetable oil, egg, lemon zest, and lemon juice.
