Lemon Ricotta Pancakes

Delicious and fluffy lemon ricotta pancakes that are perfect for breakfast.

Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, combine ricotta cheese, eggs, milk, lemon juice, and lemon zest until smooth.
  2. In another bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, about 3-4 minutes.
  6. Flip and cook for another 2-3 minutes until golden brown.

Notes

  • Serve with maple syrup or fresh berries.
  • For extra fluffiness, whip the egg whites separately and fold them in at the end.
