Lentil Soup

A delightful and hearty lentil soup featuring turkey bacon and an array of vegetables.

Ingredients

  • 1 cup dried lentils
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Sauté onion, garlic, carrots, and celery in the bacon drippings until tender.
  3. Add lentils, thyme, vegetable broth, and diced tomatoes to the pot.
  4. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils are tender.
  5. Stir in cooked bacon, and season with salt and pepper.
  6. Serve hot.
