Maple Dijon Chicken & Roasted Sweet Potato Bowls

Delicious and easy-to-make Maple Dijon Chicken served with roasted sweet potatoes for a wholesome meal.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons Dijon mustard
  • 1/4 cup maple syrup
  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the Dijon mustard and maple syrup together.
  3. Coat the chicken breasts in the maple Dijon mixture.
  4. Chop the sweet potatoes and place them on a baking sheet.
  5. Drizzle olive oil, garlic powder, salt, and pepper over the sweet potatoes.
  6. Place the chicken on the baking sheet with the sweet potatoes.
  7. Bake for 25-30 minutes or until the chicken is cooked through and sweet potatoes are tender.

Notes

  • For extra flavor, marinate the chicken in the maple Dijon sauce for at least an hour before cooking.
