Ingredients

  • 2 chicken breasts
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix maple syrup, Dijon mustard, garlic powder, and onion powder to create the marinade.
  3. Place chicken in a baking dish and pour marinade over. Let it sit for 15 minutes.
  4. While the chicken marinates, peel and cube the sweet potatoes.
  5. Toss sweet potatoes with olive oil, salt, and pepper, then spread them on a baking sheet.
  6. Bake sweet potatoes for 25 minutes, stirring halfway through.
  7. Place chicken in the oven and bake for 20-25 minutes or until cooked through.
  8. Slice the chicken and serve over a bed of spinach, topped with roasted sweet potatoes.
