- 2 chicken breasts
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup spinach
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix maple syrup, Dijon mustard, garlic powder, and onion powder to create the marinade.
- Place chicken in a baking dish and pour marinade over. Let it sit for 15 minutes.
- While the chicken marinates, peel and cube the sweet potatoes.
- Toss sweet potatoes with olive oil, salt, and pepper, then spread them on a baking sheet.
- Bake sweet potatoes for 25 minutes, stirring halfway through.
- Place chicken in the oven and bake for 20-25 minutes or until cooked through.
- Slice the chicken and serve over a bed of spinach, topped with roasted sweet potatoes.
