  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chicken thighs, tomatoes, olives, lemon, garlic, olive oil, oregano, salt, and pepper.
  3. Toss until everything is evenly coated.
  4. Transfer the mixture to a baking dish.
  5. Bake for about 35-40 minutes, or until the chicken is cooked through.
