  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. Add the sliced vegetables to the skillet and sauté for 5-6 minutes until tender.
  5. Stir in the garlic, oregano, paprika, salt, and pepper, and cook for another minute.
  6. Return the chicken to the skillet and mix everything together.
  7. Top with feta cheese and parsley before serving.
