Pumpkin Soup

A deliciously creamy pumpkin soup with a unique twist of turkey bacon.

Ingredients

  • 2 cups pumpkin puree
  • 1 cup heavy cream
  • 1 cup turkey bacon, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped turkey bacon and cook until crispy.
  3. Stir in pumpkin puree, garlic powder, onion powder, chicken broth, salt, pepper, and nutmeg.
  4. Bring to a simmer and cook for 15 minutes.
  5. Reduce heat and stir in heavy cream. Cook for an additional 5 minutes.
  6. Blend the soup until smooth, then serve warm.

Notes

  • Top with additional cooked turkey bacon for serving.
  • Can be garnished with pumpkin seeds or fresh herbs.
