- 8 ounces rice vermicelli noodles
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 onion, sliced
- 2 carrots, julienned
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 green onions, chopped
- Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the turkey bacon and cook until crispy, then remove and chop.
- Add the onion, carrots, bell pepper, and garlic to the skillet. Stir-fry for about 5 minutes.
- Add the diced chicken ham, cooked noodles, curry powder and soy sauce. Toss everything together and cook for another 3-5 minutes until heated through.
- Stir in the chopped green onions before serving.
Notes
- For extra flavor, consider adding a dash of sesame oil before serving.
