Ingredients

  • 1 pound sausage, sliced
  • 1 medium butternut squash, peeled and diced
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups kale, chopped

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add sausage and cook until browned.
  2. Transfer the sausage to the slow cooker.
  3. Add butternut squash, onion, carrots, garlic, chicken broth, thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours, or high for 3-4 hours.
  5. Stir in the kale during the last 30 minutes of cooking.
