Southern Maple Sweet Potato Casserole

A delicious take on the classic sweet potato casserole, enhanced with the richness of maple syrup.

Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil sweet potatoes until tender, then peel and mash them.
  3. In a large bowl, combine mashed sweet potatoes, maple syrup, brown sugar, cinnamon, nutmeg, salt, milk, eggs, and vanilla. Mix well.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30 minutes, then remove from oven and top with mini marshmallows.
  6. Return to the oven and bake for an additional 10 minutes until marshmallows are golden.

Notes

  • For a crunchier topping, you can add crushed pecans on top of the marshmallows.
  • Using homemade maple syrup enhances the flavor even more.
