  • 2 cups almond flour
  • 1/4 cup sweetener of choice
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup Greek yogurt
  • 3/4 cup sweetener of choice
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, sweetener, and melted butter; mix until crumbly.
  3. Press the mixture into the bottom of a greased baking pan to form the crust.
  4. In a separate bowl, beat together softened cream cheese, Greek yogurt, sweetener, eggs, and vanilla until smooth.
  5. Pour the cream cheese mixture over the crust and spread evenly.
  6. Bake for 30-35 minutes, or until the center is set and edges are slightly golden.
  7. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
