- 2 large sweet potatoes
- 1 can black beans, rinsed and drained
- 1 cup quinoa
- 1 avocado, sliced
- 1 teaspoon olive oil
- 1 teaspoon paprika
- Salt to taste
- 1/2 teaspoon cumin
