  • 2 large sweet potatoes
  • 1 can black beans, rinsed and drained
  • 1 cup quinoa
  • 1 avocado, sliced
  • 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. Toss sweet potatoes with olive oil, paprika, cumin, and salt.
