  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter

Instructions

  1. In a bowl, combine flour, coconut, macadamia nuts, baking powder, salt, and sugar.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. Serve with coconut syrup drizzled on top.
