Tortellini Pasta Salad

A refreshing tortellini pasta salad packed with flavor and perfect for summer.

Ingredients

  • 8 ounces cheese tortellini
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions; drain and set aside.
  2. Cook turkey bacon in a skillet until crispy; crumble and set aside.
  3. In a large bowl, combine tortellini, turkey bacon, cherry tomatoes, cucumber, red onion, basil, and parmesan cheese.
  4. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add your favorite vegetables or proteins to the salad.
  • For a vegetarian option, omit the turkey bacon.
