Twice Baked Breakfast Potatoes

A delicious twist on the classic baked potato, loaded with turkey bacon and cheese for a hearty breakfast!

Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes. Bake for about 45-60 minutes, until tender.
  3. Cook turkey bacon in a skillet until crispy. Chop and set aside.
  4. Once potatoes are cool, slice them in half and scoop out the insides into a bowl.
  5. Mix potato flesh with sour cream, cheddar cheese, garlic powder, green onions, and season with salt and pepper.
  6. Stir in the chopped turkey bacon.
  7. Fill the potato skins with the mixture and top with additional cheese if desired.
  8. Bake for an additional 15-20 minutes, until heated through and cheese is melted.
