Twice Baked Breakfast Potatoes with Turkey Bacon and Cheese

- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the potatoes. Bake for about 45-60 minutes, until tender.
- Cook turkey bacon in a skillet until crispy. Chop and set aside.
- Once potatoes are cool, slice them in half and scoop out the insides into a bowl.
- Mix potato flesh with sour cream, cheddar cheese, garlic powder, green onions, and season with salt and pepper.
- Stir in the chopped turkey bacon.
- Fill the potato skins with the mixture and top with additional cheese if desired.
- Bake for an additional 15-20 minutes, until heated through and cheese is melted.
