- 1 pound chicken breast, cooked and shredded
- 4 slices turkey bacon, cooked and crumbled
- 2 cups chicken broth
- 1 can (15 ounces) white beans, drained and rinsed
- 1 cup diced tomatoes with green chilies
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup corn, frozen or canned
- 1/2 cup sour cream
- 1 cup shredded cheese, for topping
- In a large pot, cook the chopped onion and minced garlic until softened.
- Add the cooked chicken, turkey bacon, chicken broth, white beans, diced tomatoes, cumin, chili powder, and corn. Bring to a boil.
- Reduce heat and simmer for about 20 minutes.
- Stir in the sour cream until well combined. Adjust seasoning as needed.
- Serve hot, topped with shredded cheese.
