White Chicken Chili

  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 2 cups chicken broth
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 cup diced tomatoes with green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn, frozen or canned
  • 1/2 cup sour cream
  • 1 cup shredded cheese, for topping

Instructions

  1. In a large pot, cook the chopped onion and minced garlic until softened.
  2. Add the cooked chicken, turkey bacon, chicken broth, white beans, diced tomatoes, cumin, chili powder, and corn. Bring to a boil.
  3. Reduce heat and simmer for about 20 minutes.
  4. Stir in the sour cream until well combined. Adjust seasoning as needed.
  5. Serve hot, topped with shredded cheese.
