- 1 cup quinoa
- 2 cups vegetable broth
- 1 butternut squash, diced
- 2 cups kale, chopped
- 1 cup Brussels sprouts, halved
- 1 cup cranberries
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cinnamon
- Preheat the oven to 400°F (200°C).
- In a pot, bring vegetable broth to a boil and add quinoa. Reduce heat and simmer for 15 minutes.
- Toss the butternut squash and Brussels sprouts in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
- In the last 5 minutes of roasting, add kale to the baking sheet.
- Once quinoa is cooked, fluff with a fork and mix in roasted vegetables, cranberries, and walnuts.
- Sprinkle with cinnamon and serve warm.
